Alessandro Schiavon

Originally from Imperia, Alessandro discovered his passion for cooking at just 16, working in his family’s trattoria. At 18, he moved to Milan and trained at Ristorante Bice under the guidance of Chef Enzo Mazzone, refining his technique, discipline, and attention to detail.

After taking on increasingly responsible roles, he returned to his hometown to elevate the culinary offering of the family trattoria, reimagining Ligurian cuisine with a modern yet authentic touch. Today, he serves as Executive Chef at the Europa Palace in Sanremo, where he continues to blend tradition and innovation with elegance, passion, and a constantly evolving gastronomic vision.

While seafood remains at the heart of our menu, it is thoughtfully complemented by robust meat and land-inspired dishes, subtly enriched with fusion nuances.
